Oatmeal Protein Muffins

Ingredients


For the muffins

  • 1 ½ cups old fashioned rolled oats

  • 1/2 Tsp cinnamon⠀

  • 1 Tsp baking powder⠀

  • 1 large egg

  • 1/4 cup maple syrup

  • 1 cup unsweetened almond milk

  • 1 scoop vanilla whey protein powder

  • pinch of salt

Make them oatmeal apple muffins

  • 1 cup apple, chopped into small pieces

  • 1/3 cup pecans, roughly chopped

Make them oatmeal blueberry muffins

  • 1 cup blueberries

  • 1/3 cup walnuts, roughly chopped

Instructions


  1. Heat oven to 350°F

  2. In a large bowl, mix together all the ingredients and add in any other fruit or nuts that you desire

  3. Line a tray with muffin tins and fill until about 3/4th of the way full

  4. Bake for approximately 20 minutes, until a toothpick runs clean

FAQs

Do no flour muffins still rise and taste good?

Yes! The rolled oats will act as the binder and there is no need for flour!
