Chana Masala

Ingredients

  • 2 cans of chickpeas

  • 2 Roma Tomatoes or 1 large tomato

  • 1 Lime (more to taste)

  • 3 Garlic Cloves

  • 1-2 Tbsp Olive Oil

  • 4 Bay Leaves

  • 4 Cloves

  • 1 Pepper

  • 1 Tsp Cumin Seeds

  • 1 Tbps Chana Masala Powder

  • 1 tsp fresh ginger

  • ½ tsp turmeric powder

  • 1 tsp red pepper powder

  • ½ tsp coriander powder

Instructions

  1. In a large pot, add in 1 Tbsp of olive oil, and simmer over medium-low heat

  2. Add in 4 bay leaves, 4 cloves, 1 pepper, and 1 tsp of cumin seeds

  3. Simmer until the seeds are dark

  4. Finely dice one red onion (can also put in a food processor) and simmer until soft and no longer crunchy, stirring occasionally 

  5. Dice 2 roma tomatoes or 1 large tomato and simmer, stirring occasionally

  6. Add 1 lime along along with 1 cup of water

  7. Add 1 tsp of salt, continue to salt food to taste while you cook

  8. Add 3 minced garlic, 1 tbps chana masala powder, and 1 tsp fresh ginger

  9. Continue to simmer and stir occasionally

  10. Add 2 cans of chickpeas (or ones that you cooked freshly with a pressure cooker)

  11. Add 1 cup of water

  12. Add ½ tsp turmeric powder, 1 tsp red pepper powder, and ½ tsp of coriander, pinch of salt

  13. Add ½ cup of water

  14. Add in salt and ½ tsp chana masala powder, to taste
