Chana Masala
Ingredients
2 cans of chickpeas
2 Roma Tomatoes or 1 large tomato
1 Lime (more to taste)
3 Garlic Cloves
1-2 Tbsp Olive Oil
4 Bay Leaves
4 Cloves
1 Pepper
1 Tsp Cumin Seeds
1 Tbps Chana Masala Powder
1 tsp fresh ginger
½ tsp turmeric powder
1 tsp red pepper powder
½ tsp coriander powder
Instructions
In a large pot, add in 1 Tbsp of olive oil, and simmer over medium-low heat
Add in 4 bay leaves, 4 cloves, 1 pepper, and 1 tsp of cumin seeds
Simmer until the seeds are dark
Finely dice one red onion (can also put in a food processor) and simmer until soft and no longer crunchy, stirring occasionally
Dice 2 roma tomatoes or 1 large tomato and simmer, stirring occasionally
Add 1 lime along along with 1 cup of water
Add 1 tsp of salt, continue to salt food to taste while you cook
Add 3 minced garlic, 1 tbps chana masala powder, and 1 tsp fresh ginger
Continue to simmer and stir occasionally
Add 2 cans of chickpeas (or ones that you cooked freshly with a pressure cooker)
Add 1 cup of water
Add ½ tsp turmeric powder, 1 tsp red pepper powder, and ½ tsp of coriander, pinch of salt
Add ½ cup of water
Add in salt and ½ tsp chana masala powder, to taste
