Parmesan Kale Salad
Ingredients
For the salad
1 bunch of kale
1 cup cooked quinoa, cooled in the fridge
1/4 sliced almonds
1/3 cup dried cranberries
4 Tbsp freshly grated parmesan cheese, more to taste
For the dressing
1 clove garlic, minced
1 small shallot, minced
1 lemon, juiced
2 Tbsp olive oil
salt and pepper
Instructions
Prepare the Kale
Chop 1 bunch of kale into small pieces and add to a large bowl.
Drizzle with a little olive oil and massage with your hands for about a minute until the leaves soften.
Make the Dressing
In a small bowl, whisk together 1 minced garlic clove, 1 minced shallot, juice of 1 lemon, 2 tbsp olive oil, and a pinch of salt and pepper.
Assemble the Salad
Add to the kale: 1 cup cooked quinoa, ΒΌ cup sliced almonds, β cup dried cranberries, and 4 tbsp Parmesan.
Pour the dressing over the salad and toss well to combine.
