Parmesan Kale Salad

Ingredients


For the salad

  • 1 bunch of kale

  • 1 cup cooked quinoa, cooled in the fridge

  • 1/4 sliced almonds

  • 1/3 cup dried cranberries

  • 4 Tbsp freshly grated parmesan cheese, more to taste

For the dressing

  • 1 clove garlic, minced

  • 1 small shallot, minced

  • 1 lemon, juiced

  • 2 Tbsp olive oil

  • salt and pepper

Instructions


  1. Prepare the Kale

    Chop 1 bunch of kale into small pieces and add to a large bowl.

    Drizzle with a little olive oil and massage with your hands for about a minute until the leaves soften.

  2. Make the Dressing

    In a small bowl, whisk together 1 minced garlic clove, 1 minced shallot, juice of 1 lemon, 2 tbsp olive oil, and a pinch of salt and pepper.

  3. Assemble the Salad

    Add to the kale: 1 cup cooked quinoa, ΒΌ cup sliced almonds, β…“ cup dried cranberries, and 4 tbsp Parmesan.

    Pour the dressing over the salad and toss well to combine.
