Malfatti (Large Ricotta Gnocchi)

Ingredients

  • 1 bag of organic spinach

  • 1/2 cup of ricotta cheese

  • 1 egg yolk

  • 4 Tbsp of flour

  • Parmesan cheese, to taste

  • zest of one lemon

For the tomato sauce

  • 1 Tbsp olive oil

  • 1 garlic, chopped

  • 1 tsp red chili flakes, to taste

  • bunch of basil, more to taste

  • 14 oz can of cherry tomatoes

Instructions

1. Cook the spinach on a skillet and remove all the excess water and then chop

2. In a bowl, mix together ricotta, egg yolk, flour, parmesan, lemon zest, and chopped spinach

3. Make small balls on a well floured surface, about an inch wide

4. To make the tomato sauce, heat olive oil in a skillet and add garlic, chili flakes, and basil for a few minutes. Add the canned cherry tomatoes and season with salt and pepper. Let simmer for about 5 minutes.

5. Add the spinach ricotta balls to skillet and cover and cook for roughly 5 minutes
