Roasted Cauliflower

Ingredients

  • 1 large cauliflower, chopped into florets

  • 6 medium garlic cloves, minced

  • 3 Tbsp high quality olive oil

  • 1 handful of freshly grated parmesan cheese, to taste

  • 1 handful of fresh parsley, chopped

  • salt and pepper, to taste

Instructions

  1. Preheat oven to 450 F.

  2. Rinse and ensure cauliflower is completely dry and chop into equal size florets. Optional, to cut into flat edges to increase the caramelization in the oven.

  3. Mince garlic.

  4. Place garlic, olive oil, salt and pepper, and cauliflower into a large zip lock bag and shake cauliflower around to throughly marinate the cauliflower. This is really essential and makes the cauliflower way more flavorful.

  5. Bake for about 25 minutes and stir halfway through.

  6. Once almost done, add parmesan cheese and parsley and broil for a few minutes until golden brown.

  7. Optional to add some lemon juice, additional cheese, and parsley on top before serving.
