Ingredients
1 bag of frozen super sweet Mexican fire grilled corn
1 medium jalapeño, diced with seeds removed
olive oil, enough to sauté
½ bunch cilantro, washed and chopped with stems
1 lime, juiced
crumbled cotija cheese, to taste
Instructions
In a skillet, drizzle some olive oil and heat on medium-high.
Add frozen corn and diced jalapeño until heated through, roughly 5 minutes.
Removed from heat and add lime, cilantro and cotija cheese.
