Banana Nut Bread Vegan

Ingredients


  • 1 Tbsp ground flaxseed

  • 3 overripe bananas, mashed

  • 1/2 Tsp vanilla extract

  • 3 Tbsp coconut oil

  • 1/2 cup coconut sugar (can use brown sugar too)

  • 3 Tbsp honey

  • 3 ½ Tsp baking powder

  • 3/4 Tsp salt

  • 1/2 Tsp cinnamon

  • 1 ¼ almond flour

  • 1 ½ oat flour (blend rolled oats in a blender to make flour)

  • 1 ¼ rolled oats

  • 3/4 cup almonds, finely chopped

  • 1 cup walnuts, finely chopped

  • ¼ pumpkin seeds, about a handful for topping

  • 1 banana, sliced long was for topping

Instructions


  1. Preheat oven to 350 F degrees

  2. In a bowl, combine ground flaxseeds (1 Tbsp) with 2 Tbsp of water, stir, and let sit for a few minutes to congeal

  3. In a large bowl, combine mashed bananas (3), vanilla extract (1/2 Tsp), oil (3 Tbsp), sugar (1/2 cup), honey (3 Tbsp), baking powder (3 ½), salt (3/4 Tsp), cinnamon (1/2 Tsp), and ground flaxseed mixture and stir.

  4. Add the flours (1 ¼ almond flour, 1 ½ oat flour, 1 ¼ oats) and lightly fold in chopped nuts (3/4 cup almonds, 1 cup walnuts)

  5. Line a 9 inch pie pan with nonstick foil and pour in batter

  6. Add sliced banana in the center and sprinkle with pumpkin seeds (1/4 cup)

  7. Bake for about 1 hour, checking to make sure the bread does not turn too dry and cracked or burned
