Butter Caper Salmon

Ingredients

  • ~1 pound of salmon, with skin

  • Olive oil

  • 2-4 Tbsp of butter, more to taste

  • 2 Cloves of fresh garlic

  • a few spoonfuls of capers, to taste

  • 1 large lemon, to taste

  • Salt

  • Fresh dill, optional to add parsley as well 

Instructions

  1. Preheat the oven to 325 F.

  2. Let salmon come closer to room temperature (10 mins) and dry with a paper towel and then season with some salt on both sides, option to use citric acid as well.

  3. In a cast iron skillet, melt butter over low heat and add minced garlic until fragrant and bubbling, but be careful not to burn.

  4. Add capers and stir.

  5. Add salmon skin side down and bast with butter sauce, drizzle some olive oil.

  6. Add aluminum foil over the salmon and pop into the oven for ~20 mins.

  7. Bast the salmon with the butter sauce and do again every 5 minutes until the salmon is cooked through.

  8. Add in some fresh dill and squeeze fresh lemon juice.
