Key Lime Bars

Ingredients


For the filling

  • 1 cup raw cashews

  • 1 cup coconut cream

  • 2 Tbsp cornstarch

  • 1/2 cup lime juice

  • 1 Tbsp lime zest (~2 limes)

  • 1 pinch salt

  • 1/4 cup maple syrup, more to taste

For the crust

  • 1 cup rolled oats

  • 1 cup almonds

  • 1/4 Tsp sea salt

  • 1 1/2 Tbsp coconut sugar

  • 3-4 Tbsp coconut oil, melted

Instructions


  1. Place cashews in a bowl, cover with boiling water, and let sit for 1 hour. Drain and set aside.

  2. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.

  3. To make crust, blend oats, almonds, salt, and coconut sugar until you get a fine meal. Add 3 tbsp melted coconut oil (add more if too dry) and pulse until a loose dough forms.

  4. Press dough evenly into the pan, cover with parchment, and firmly pack down.

  5. Bake for 12 minutes, then increase to 375°F and bake another 5–8 minutes until golden. Let cool slightly and reduce oven back to 350°F.

  6. To make filling, blend the soaked cashews, coconut cream, cornstarch, lime juice and zest, salt, and maple syrup until smooth and creamy.

    • Taste and adjust with more lime zest or maple syrup if needed.

  7. Pour the filling over the crust and smooth the top and tap the pan gently to release air bubbles.

  8. Bake for 18–23 minutes, until edges look dry and the center is just slightly jiggly.

  9. Let cool for 10 minutes, then refrigerate uncovered overnight until fully set.
