Healthy Date Banana Pancakes
Ingredients
2 cups rolled oats
3 bananas, very ripe
4 eggs
2 tbsp of ground flax seeds
3 pitted dates, soaked in water overnight and finely chopped
1 tsp vanilla extract
1/2 – 1 tsp cinnamon
¼ tsp nutmeg
~1 tbsp psyllium husk
1/2 cup almond milk
Pinch of salt
coconut oil
berries, optional topping
maple syrup, optional topping
Instructions
Optional, soak (3) dates in water overnight
Blend oats (2 cups) in blender until it turns into a fine flour
In a large bowl, mash the (3) bananas and add (4) eggs and mix
Add oat flour, ground flax seeds (2 tbsp), and (1 tbsp) psyllium husk to bowl and mix well.
Chop (3) dates into very small pieces and add to bowl along with vanilla extract (1 tsp), cinnamon (1/2-1 tsp), and nutmeg (1/4 tsp) mix
Add in the almond milk (1/2 cup) and some salt and mix
Heat some coconut oil on a non-stick pan over medium heat
Add batter to the heated pan and allow the pancakes to cook for 1-2 minutes and then flip to the other side for about a minute until they are golden brown and cooked through
Top with fresh berries such as blueberries, blackberries, and raspberries and serve with maple syrup
