Asian Chopped Cole Slaw Salad

Ingredients


For the salad

  • ~1/2 white cabbage, thinly sliced

  • ~1/2 red cabbage, thinly sliced

  • 1 medium red bell pepper, thinly sliced

  • 2 handfuls of julienned carrots

  • 6 green onions, sliced

  • 1 handful of fresh cilantro, chopped

  • whole sesame seeds

  • cashews, toasted and chopped

  • optional, crispy chow mein noodles

For the dressing

  • 4 Tbsp sesame oil

  • 4 Tbsp rice vinegar

  • 2 Tbsp honey

  • 1-2 limes, juiced and to taste

  • 2 Tsp fresh ginger, grated

  • salt and pepper, to taste

HELPFUL TIPS

You don’t need to measure the recipe but do to taste and your own liking, just careful not to add too much cabbage or it will dilute the dressing

Add the cashews and crispy chow mein noodles right before serving to ensure they don’t get soggy

The salad will soften the longer you let the it sit in the dressing, but it will also dilute the salad and the water will come to the bottom

Instructions


  1. Roast the cashews in the microwave by placing them in a bowl and microwaving for a minute and then increments of 30 seconds.

  2. Make the salad dressing in a mason jar and shake.

  3. Slice and prepare all the vegetables in a bowl.

  4. Mix in dressing and top with cashews and chow mein noodles.
