Carrot Ginger Soup

Ingredients

  • 1 Tbsp extra-virgin olive oil

  • ½ yellow onion, chopped

  • ½ Tsp salt

  • 3 garlic cloves, smashed in garlic press

  • 1 pound carrots, chopped

  • 1 Tsp fresh ginger, grated

  • 1 Tbsp apple cider vinegar

  • 3 cups vegetable broth, more to desired thickness

  • Black pepper, to taste

  • Coconut milk, for garnish

Instructions

  1. In a large dutch oven or pot, heat 1 Tbsp of olive oil. Then add chopped onions, salt and pepper and cook until softened, stirring occasionally. Add garlic and carrots to the pot and cook more for about 10 minutes.

  2. Stir in the ginger, apple cider vinegar, and broth. Bring to a boil, then reduce the heat and simmer for 30 minutes.

  3. Make sure to let cool before adding to a blender and blend until smooth. Add additional salt and pepper to taste.

  4. Garnish with coconut milk if you would like.
