Gooey Oatmeal Bake

Ingredients

  • 1 banana

  • 1 cup unsweetened almond milk

  • ¼ cup smooth almond butter // 1 package of Justin’s classic almond butter (1.15 oz)

  • ¼ cup maple syrup

  • 1/8 cup melted coconut oil

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon  

  • ½ teaspoon sea salt

  • 1 1/3 cups whole rolled oats

  • 1/2 cup chopped pecans

  • ½ cup chopped walnuts

  • 1 cup blueberries, fresh or frozen

  • 2 tablespoons coconut sugar, for topping

  • 2 tablespoons coconut flakes, for topping

  • Protein powder, optional and to taste

  • Psyllium husk, to taste

Instructions

  1. Preheat the oven to 350°F and grease an 8x8-inch or similar baking dish.

  2. Mix together the mashed banana, almond milk, almond butter, maple syrup, and coconut oil

  3. Add the baking powder, cinnamon, and salt and whisk again.

  4. Fold in the oats, pecans, and blueberries. Pour the mixture into the prepared baking dish and smooth into an even layer.

  5. Top with brown sugar, and coconut flakes.

  6. Bake for approximately 40 to 50 minutes, when the middle is set and a toothpick runs clear when poked.
