Grape Zucchini Salad

Ingredients


For the salad

  • 1 bag of lettuce of your choice

  • A handful of green onions, thinly sliced

  • 4 zucchini, sliced and baked with green onions and oil

  • pine nuts, toasted and to taste

  • A bunch of red grapes, to taste

  • A handful of feta cheese, to taste

  • Fresh mint, sliced into thin pieces, to taste

For the croutons

  • 1 Sourdough baguette, ripped into small pieces

  • Rice wine vinegar, ~1 Tbsp (I don’t measure and put some in a small bowl and mix with water)

  • Water

For the dressing

  • ~1 lemon

  • salt & pepper

  • ~6 Tbsp olive oil

  • ~2 Tbsp water

  • Sliced green onion and mint, to taste

Helpful Tips

  • I didn’t measure out anything in this recipe, just do by taste!

  • I like to use alot of fresh herbs in salads

Instructions


  1. Thinly slice a few springs of green onion, avoiding the white portion, and mix with some olive oil, salt and pepper. Slice zucchini in rounds and toss with the oil mixture and bake at 400 degrees and flip halfway through. Check the zucchini after 10 minutes and then 5 minutes after.

  2. Toast pine nuts by placing the microwave for a minute and then mix and then place again in the microwave for about 30 seconds. Can continue until toasted to your liking.

  3. Rip sourdough into small pieces and drizzle with olive oil and salt. Bake at 400 degrees until crispy for about 10 minutes. Add not more than a tablespoon of rice vinegar with some water and sprinkle on the croutons so that they become slightly soft again and place back into the oven until crispy to your liking.

  4. Incorporate all ingredients in the salad - add feta cheese, sliced grapes, zucchini, pine nuts, and croutons. Mix in dressing to taste and toss with fresh mint and green onions. Add salt and pepper to taste.
