Mochi Pancakes
Ingredients
1 cup all purpose flour
1 cup glutinous rice flour
~1/8 cup monk fruit sugar, to taste (I like to add date paste)
2 tsp baking powder
1/4 teaspoon salt
1 1/4 cup buttermilk
2 eggs
2 tbsp butter, melted
1 1/2 teaspoons vanilla extract
Helpful Tips
Substitute the sugar with any other sugar such as stevia
I add date paste for extra sweetness as well (soak dates in hot water and mix in a blender)
Top with powdered sugar, maple syrup, or fresh fruit
Instructions
In a bowl, mix dry ingredients together.
In a separate bowl, combine wet ingredients and whisk until well combined.
Add the bowl of dry ingredients to the bowl of wet ingredients and mix until combined, no need to over-mix.
Heat a nonstick skillet and lightly grease with butter or oil.
Turn heat down on medium low, scoop pancake mixture and cook a few minutes on each side. It is easy to burn these so make sure the heat is turned on low!
