Mochi Pancakes

Ingredients


  • 1 cup all purpose flour

  • 1 cup glutinous rice flour

  • ~1/8 cup monk fruit sugar, to taste (I like to add date paste)

  • 2 tsp baking powder

  • 1/4 teaspoon salt

  • 1 1/4 cup buttermilk

  • 2 eggs

  • 2 tbsp butter, melted

  • 1 1/2 teaspoons vanilla extract

 

Helpful Tips

Substitute the sugar with any other sugar such as stevia

I add date paste for extra sweetness as well (soak dates in hot water and mix in a blender)

Top with powdered sugar, maple syrup, or fresh fruit

 

Instructions


  1. In a bowl, mix dry ingredients together.

  2. In a separate bowl, combine wet ingredients and whisk until well combined.

  3. Add the bowl of dry ingredients to the bowl of wet ingredients and mix until combined, no need to over-mix.

  4. Heat a nonstick skillet and lightly grease with butter or oil.

  5. Turn heat down on medium low, scoop pancake mixture and cook a few minutes on each side. It is easy to burn these so make sure the heat is turned on low!
