Bulgur Salad

Ingredients


For the salad

  • 3/4 cup of dry bulgar, makes double after soaked with 1 1/2 of hot water

  • ~6 stalks of green onion, thinly sliced

  • A bunch of fresh mint, to taste and thinly sliced

  • A bunch of fresh parsley, to taste and thinly sliced

  • A cup Kamalata olives, sliced

  • 5 oz fresh cherry tomatoes, sliced in half

  • feta cheese, crumbled

  • ~ 1/3 cup of pistachios, minced

For the dressing

  • 1 garlic clove, grated

  • Juice of 1/2 lemon, more to taste

  • Juice of 1/2 orange, more to taste

  • Salt and pepper

  • ~1 Tbsp of high quality olive oil

  • a drizzle of champagne vinegar

Helpful Tips

  • I didn’t measure out anything in this recipe, just do by taste!

  • I like to use alot of fresh herbs in salads, add more if you would like!

Instructions


  1. In a large bowl, add 3/4 cup bulgar and 3/4 cup hot water and let soak for at least 1 hour.

  2. In the same bowl, add all the ingredients along with dressing ingredients, adjust to taste.
