Bulgur Salad
Ingredients
For the salad
3/4 cup of dry bulgar, makes double after soaked with 1 1/2 of hot water
~6 stalks of green onion, thinly sliced
A bunch of fresh mint, to taste and thinly sliced
A bunch of fresh parsley, to taste and thinly sliced
A cup Kamalata olives, sliced
5 oz fresh cherry tomatoes, sliced in half
feta cheese, crumbled
~ 1/3 cup of pistachios, minced
For the dressing
1 garlic clove, grated
Juice of 1/2 lemon, more to taste
Juice of 1/2 orange, more to taste
Salt and pepper
~1 Tbsp of high quality olive oil
a drizzle of champagne vinegar
Helpful Tips
I didn’t measure out anything in this recipe, just do by taste!
I like to use alot of fresh herbs in salads, add more if you would like!
Instructions
In a large bowl, add 3/4 cup bulgar and 3/4 cup hot water and let soak for at least 1 hour.
In the same bowl, add all the ingredients along with dressing ingredients, adjust to taste.
