Niçoise Salad

Ingredients


For the salad

  • 2 bunches of butter lettuce, washed and chopped

  • ¼ pound baby red potatoes, boiled

  • 1 package of green beans, steamed

  • 1 large handful of fresh basil, finely chopped and more to taste

  • 2 large tomatoes, cut into wedges

  • 1 tuna packed in olive oil, drained

  • 4 hard-boiled eggs

  • ½ cup pitted kalamata olives, sliced

  • Black pepper and salt, for serving

For the dressing

  • 1 large garlic clove, minced

  • 1/4 tsp anchovy paste

  • ¼ teaspoon salt, more to taste

  • ~juice from 2-3 lemons, more to taste

  • Lemon zest 2 lemons, more to taste

  • ½ teaspoon Dijon mustard

  • ⅓ cup olive oil, more as needed

Helpful Tips

  • Double the dressing if you prefer your salads with heavier dressing!

  • Toss the salad with the dressing before placing the toppings

  • Hard boil eggs by adding eggs to boiled water for 11 minutes and then place in ice bath for them to be a little soft.

Instructions


  1. In a mason jar, add all salad dressing ingredients and adjust to taste.

  2. In a large bowl, add the chopped butter lettuce and mix with some of the dressing and toss so that the lettuce is well coated.

  3. Add all the ingredients on top of the salad and serve!
